Razzle Dazzle Me Raspberry Mousse

Here is another recipe for a healthy dessert using your homemade kefir.  This raspberry mousse is so creamy and decadent it’s hard to believe it could be good for you!  I do plan to go finish this off as soon as I’m done with the blog post:)

Raspberry Kefir Mousse

2 1/2 cups fresh raspberries

1 cup kefir

1/2 cup honey

1/4 cup cold water

one 1/4 ounce packet gelatin

Place the water in a small saucepan and sprinkle the gelatin over that.  While that sits, whirl the raspberries around in your blender until they are completely liquified.  Push them through a mesh strainer to remove the seeds.  To your strained raspberries, whisk in the kefir and the honey.  You want to end up with 3 cups of liquid.  If you don’t have quite enough (you never can tell with those raspberries) add a little more kefir.

Put the gelatin on low heat and stir until completely dissolved.  Whisk dissolved gelatin into the berry/kefir mixture.

Refrigerate for a couple hours or until it firms up.

Super easy, super delicious, and it’s good for your belly!
